Back in the 70's, Max told me that I could have his recipes and open a shop in Montréal. I had to explained to him that one would need the blessing of the "family", Cotroni at the time for that to happened...

Risotto balls and shrimp bisque to start. I had the chicken risotto which was great although not overly aesthetic. She had the pork ribs. Finished with a apple tart and orange creme brûlée.

Thanks. I made the pizza dough on Tuesday with 00 flour and let it cold ferment in the fridge until this afternoon.
