Coolant/engine temperature dip after hard acceleration?

I'm not too car knowledgeable so bear with me.

Firstly, is the below image the coolant/water temp or the engine temp? I searched for images for both of them and get the same symbols.

I'll assume that's the coolant temp for now. For background, I was driving the 6m/t and was trying to drift/slide around in 1st gear and do hard accelerations from stops a couple of times. My coolant and oil temperature were warmed at that point (needle was at halfway point in the gauge).

I noticed after doing a bit of that, the coolant temp dips from the halfway point to the quarter point for a couple of seconds and then climbs back up. Is this normal? I never noticed this before since I don't normally drive the car hard as I did today. I never tracked/autocrossed so I don't know.

Of less concern, after doing some drift/slide attempts I noticed the oil temp was a tick higher than the halfway point and then it came down soon afterwards. I'm more concerned about the coolant temp dipping and coming back up. Only dips during the stuff I did and stays normal during regular driving.

The one on the cluster is oil temp, water temp is buried in the BC cluster menus. The cooling system on these does a very very good job, dropping temps quickly during hard driving.

I see this too, like it tracks the engine speed.
