Why doesn't BMW make these cars with equal length mid pipes?

Im new to M cars or owning a real performance car in general, so this idea of equal length mid pipes is new to me as well

why doesn't bmw just make the exhaust this way? is there a downside to equal length mid pipes?

Good question.
BMW has some of the best engineers in the world working on their engines and exhaust systems. People with years of experience, and post graduate degrees on the subject, so they know what they are doing.

Exhaust lengths, and more particularly shapes have a significant effect on engine performance, power, power curves, economy etc. Also they have an effect on sound.

Designing a car like this they are balancing multiple things. Trying to optimise performance, economy and sound and meet regulatory requirements (in multiple countries and regions). They are also trying to achieve this in the most economical way for BMW, producing something that is as cost effective as possible for both parts and ease of manufacturing and assembly. Also something that is durable and not going to result in excessive warranty problems.

What they produce is what they perceive to be the optimal balance of all of the above. Obviously, sometimes performance fanatics might have a different idea of what "optimal" is:
