I smoked some chicken breasts last night with a Nashville hot rub, sliced it up and served it on top of Mac and cheese. Hardly healthy but it was amazing, I am having it again tonight.

Properly ordered as "mushroom steak wit provolone". Mine is pepper steak wit wiz.

No naan. Roll only.

Feels strange in the 'hoos' on my own until Thursday..so having the very last of the grille leftovers as I hate wastage and the blackberries from the garden afterwards with ice cream.

Masala khichdi
Recipe from Kabita’s Kitchen on yt

Or rather inspired by masala khichdi. Indian rice pilaf, if the Westernization can be excused. The original version has rice+lentils. My version tonight is rice only.

This has a warmer spice lineup compared with the other things I have made recently.

Base fry:
Oil
Green chile
Onions
Tomato
Ginger garlic paste

Add:
Rinsed and soaked Basmati rice
Coriander (cilantro) leaves
Turmeric
Salt
Water

Tadka:
Oil
Ghee
Chopped garlic
Cumin seeds
Hing (asafoetida)
Coriander powder
Red chili powder
Garam masala, which itself is a mix of spices including cinnamon, cloves, cardamom, bay leaf and a couple of others

Garnished with coriander leaves, accompanied by mint chutney and mango pickle (achar).

Vegetarian and gluten free.
