Once you get the break-in service done, are there any noticeable differences in terms of how the car drives or otherwise? I understand that pre-service it does not yet operate at its full capability but am not sure what that means in practice.

Launch control is available as soon as the car drives off the assembly line floor. Has nothing to do with having the break-in service performed.

But you're not supposed to make use of it during the break-in period.

Sure, but it is fully enabled and nothing done during the break-in service changes that. Break-in service is just some fluid and oil changes.

Can confirm.
Break-in doesnt make the car faster, nor louder, nor anything else than what the mechanics do when changing the engine and rear differential oils and filters.
