2022 BMW M3X  [10.00]
Could I run this setup on my M3X

M3 xDrive

Stock front P0's with 26.6" height

and these Cup 2's with 27.2" height

Looks to be about a 2.3% difference in height if I did my maths correctly? Would that have negative impacts on the transfer case?

Setup strictly for the drag strip.

I'm thinking NO because it would increase the revolutions per mile difference a further 10 more between the front and the rear...

If you're at the drag strip, I'm sure there has to be better tyres than Cup 2's.

I don't have experience at drag strips, only race tracks, but Cup 2's can take a while to get up to temperature and can quickly cool down. Would you be able to get them up to temps at the strip in between runs? Without temperature in Cup 2's, they are absolutely useless and scary as hell. First few laps around Limerock in my GT3 getting temps up were terrifying.

Also, with that OD difference, you're fine. Generally want to stay within 3%.

This will absolutely kill your transfer box. You should be within 1% of tire diameter difference, or else the clutch pack will get seriously harmed. 3% is way too much and the box cannot handle that.
Also, the rear tires must not be smaller in diameter than the front. This is not an issue here, but just saying.

The optimal front tire for your Cup2 would be 295/35 R19.
