yes, this feature is available in Mercedes AMGs, and having both cars makes me realize that BMW dropped the ball here.

In my AMG, I can pick my fav display for the:
1) Dash, and pick what information around the dash, like tyre pressures and engine temp

2) HUD, customise to show rpm all the time

3) Individual modes (using their rotary dials)

I really hope M1 or M2 button could do so, but so far, no luck

Yes! This.
To me it's felt like the dashboard shift-light is more accurate than the one on the HUD. Perhaps the one on the HUD has a slight delay / latency.

I disabled the HUD so that I could have the M-Mode dash and the shift lights stay on the dash as well.

The solution for this is here guys.

You can change into M Mode Screen with M1 or M2 buttons in iDrive 8 and iDrive 7 with this mod;

Would this be detectable and/or have possible warranty issues?

100% agree. I’m sure BMW is aware of this miss and likely has gotten plenty of feedback. An easy software update could resolve this, but for some reason il doubtful they’ll make the change. Not sure why they thought keeping M view out of the M1/M2 settings was an improvement.
