An new engine development program from a major OEM is a $100M undertaking, and involves thousands of simulated (dyno) and actual (vehicle) engine durability tests. The fact that the S58 torque curve isn't so much a curve but a hard stop at 600Nm suggests that BMW intentionally capped the output in the name of durability, based on a substantial amount of data from their test program.
A few drift cars that can survive a season (on maybe a 100-hour rebuild interval) isn't evidence that the engine could survive for any appreciable amount of time at 1000bhp power levels.

Agreed. The "capping" of torque curves is pretty common practice by BMW ever since they went with EWG N55 in around 2014. Controlling the curve, especially in motors like the S55 and S58, is also likely done to make the car more driveable when hammering the throttle at low rpms. The S55 in first few years of M3/M4 was a bit of handful because power was so abrupt at moderate throttle tip-in. BMW later tailored the curve to be more linear (and lower torque) and the end result was a quicker car even though the power didn't change.
I'll also add that Vehicular DIY is a super knowledgeable guy and his videos are often exceptional. For this particular video/claim, I can't quite yet get there because there are too many unknowns. I'm sure the S58 will be "stronger" than the S55, but I'm not yet convinced this is the new 2JZ. Also, when it comes to the 2JZ, yes, the short block was strong as hell and the motor could make massive power BUT, to make massive power requires lots of ancillary upgrades. It seems like most people think you can just add a single turbo, make 800+whp on the 2JZ, and that's it. That couldn't be farther from the truth.
