Because it looks good, and both Porsche and Ferrari do it. Marketing.

I think in the old days, the rotors may have stayed a little cooler with the holes, and they allowed pads to outgas better without floating. I call them cheese graters.

You could also argue that it makes the rotors lighter as well.
