I have the 11” iPad Pro cellular. I don’t buy wifi only anymore because of the reasons you listed. It just works more seamlessly and you don’t have to trust crappy 3rd party wifi. I think the Air is just fine for what your use case is. I chose pro because it adds 5G and the new M1 chip which is very snappy. I had the old iPad Pro 11” with A12x and it was fine….the air has the A14 so is a middle ground.
