Genius just told me that my car (currently at Production Begins) is still scheduled to finish between Jan 18th and Jan 21st so everything is still on track and that in half the cases the tracker does not update in real-time and it may only update once the car is completely finished.
Told me to call again next week for another update.
TL, DR: Tracker is not reliable half the time, call Genius to get updates
