So what I noticed now is if I try to engage parking break without my foot on the break I hear long winding noise of the EPB and get an error. If I have the foot on the break it operates normally???

If you are getting the parking brake error, there is a procedure in the owners manual for resetting the parking brake. Mine had the error once after picking it up, I just followed the instructions that were very simple and it hasn’t happened since. I suspect you just have to re calibrate the electric parking brake.
For bedding in, I didn’t for a while, and eventually did a typical bed in procedure once I was able to get out on a quiet road to do it.
