In the main iDrive screen, you normally get to the Apple Carplay screen by pressing up on the iDrive controller and selecting Carplay. You cannot assign this selection to a memory button.
However, if you go to the Apps page, there is a menu item for Apple Carplay that you CAN assign to a memory button.

In my current 2019 M550, it's a two step process. 1. Media Button 2. Scroll to Car Play. (Unless I'm doing it wrong 😑
